Wakasa Fugu Inn Shimokita

At Shimokura, we strive to serve our guests dishes made with ingredients of the highest quality and freshness.

Our red sea bream, tiger pufferfish (known locally as "Wakasa fugu"), and mahata are all raised with care. We also use Wakasa wakame seaweed harvested in spring.

Delicious dishes deserve delicious rice. The Koshihikari rice we serve our guests is also homegrown. We plant the rice seedlings every May and harvest the rice in late September. The milled rice is stored under carefully controlled temperatures. Our umeboshi (pickled plums) are also homemade.
